After reading reviews, decided to choose this machine as many said that cheap often breaks. This machine is sturdy and up to the job of rolling pasta dough. I had no probs with the clamp, although I moved the machine to the other side of the table to make it easier to use lefthanded. I am a complete novice and found all the reviews useful. I personally found that:
To stop pasta sticking, always lightly dust dough before putting it through the rollers. This stops it sticking and breaking. I rolled out all the sheets and let them dry about 15mins before cutting them with the tagliatelle cutters. I also cut each sheet in half to make them easier to feed through. I bought this pasta machine at the recommendation of other reviews. Although I have never used another machine I have been warned off them due to them being flimsy and breaking easily. This machine is very sturdy and I would say to anyone looking to buy one - get this one. Friends have gone through cheap machine after machine and spent lots of money finding one that is up to the job. This one is built to last. It is double the price of the cheapest but it is worth every penny.

The Imperia was given to me as a birthday present and wow do I love it.
I love cooking and I am really methodically about following recipies, going through the whole process from making your dough to cutting your pasta is just fantastic.
Honestly, once you make your own pasta - the taste! You'll never look back. From beginners to pros, the Imperia is just the best machine out there. It is easy to put together, just needs a wipe clean and it looks really good in the kitchen.
Go on, impress your friends, impress yourself - this little machine is an investment.

This arrived today and I couldn't resist having a go at making some pasta straight away. It was gloriously user friendly, the only problem I had was with finding a suitable place to clamp the machine on in my kitchen as it requires a pretty thick table/counter overhang to attach to. My daughters loved turning the handle and handling the pasta, and took particular delight in watching the unusual shaped pasta shapes emerge from the gnocchi attachment (ingenious design, incredibly simple and effective). I can see that this will give us years of good service and family participation in meal preparation.
