Rating: - Essential vegetarian cookery book!
As a confirmed carnivore living with a very strict vegetarian I have amassed quite a selection of vegetarian cookery books. A major problem for us is that, living in Spain, we don't have easy access to vegetarian cheese, and most vegetarian cookery books seem to concentrate most recipes around it! Not so with this one, which really does focus on the vegetables and lovely herbs and spices.
This book truly has become my bible. I have so far tried about 15 of the recipes and each dish has been outstanding, sadly due to the quality of the recipe rather than my culinary skills! The recipes are very clear and easy to follow and the cooking times are spot on, even in my unpredictable old gas oven.
Disregard the fact there are not many photographs in the book, after you realise how delicious the end results are you'll be glad the pages contain more recipes instead! A fabulous book.
Rating: - Enough to convert a carnivore (nearly)
I have relied on my other Leith books for some time now so I got this when I got a new vegetarian girlfriend.Initially I wasn't totally enamoured with the idea of cooking veggie but I have to say this book is fantastic, there are simple supper recipes, dinner party dishes, snacks, etc.It certainly lives up to the title.
Rating: - Leiths Veggie Bible
If you love cooking then the very fact it has so few photographs inspires you to read the recipies through. If the act of reading a recipie doesn't make you salavate then move on to a recipie that does! If like me you are fortunate enough to receive a weekly organic vegetable box then this book is invaluable! Infact it is so good I could almost become a vegetarian.
Rating: - If you only want to own one veggie cookbook...
...then you should strongly consider this one.
Its packed with recipies, many of which are easy to make, and many of which you won't find elsewhere. Its just great for finding a new way to cook with a dietary staple or if you just want to use up awkward leftover ingredients from another recipe.
Instructions are clear, its well organised and indexed, and it makes accompaniment suggestions, which I appreciate. My only quibble is the limited number of photos, as I think they add greatly to any quality cookbook. However, what is already a very thick book would then be twice the size and probably thrice the cost if they also published a photo for every recipe!!!

Rating: - The best vegetarian cookery book I've found
As co-owner of an extensive cookery book collection (100+), I can honestly say that this one gets more use than any of the others, both by myself and my (non-vegetarian) partner. Some recipes are more time-consuming than others, but few are technically difficult. Most also lend themselves to adaptation if the 'right' ingredients aren't to hand. It's particularly excellent if you subscribe to an organic veg delivery scheme, as there are a few recipes for just about any obscure veg you can think of, as well as all the more ordinary stuff. I'd recommend this to anyone who really likes food.
