First published in 2000 this is still the best as an all-rounder.
For someone who, not put too fine a point on it, hates cooking, I recommend this because the recipes are: a) EASY to follow b) glossy pictures to entice you along the painful process and c) doesn't use expensive ingredients.
The whole veganism idea (which isn't the reason I started vegan) is explained in the first few reference styled pages and is EXCELLENT for those who want a quick intro and what to substitute things with.
The only criticisms I would have (if I had any) is that I'd have liked more recipes to show a wheat-free alternative than pasta or bread, and also for recipes without a clear protein product to have one. This can easily be remedied by knowing your proteins / wheat substitutions which can be found easily on the net, and adjusting the recipe accordingly.
