This is a wonderful collection of easy to prepare vegetarian dishes that taste amazing. Nadine Abensur transforms simple vegetables like potatoes and spinach into something heavenly. This is what vegetarian food is all about ... dishes that make you want to make them again and again and again. Some of my favourites are the beetroot risotto, spinach soup, and the celeriac and porcini gratin. I love this book because all the dishes I have tried are lovely and if you're cooking for someone else you can be guaranteed that whatever you choose to make from this book will impress your guest without fail. I can't say enough good things about this book. I was surprised by the comment about pasta dishes as only 1 out of the 10 chapters in this relates to pasta. For the tofu fans I would highly recommend the mushroom and tofu stroganoff which has a lovely strong rich flavor. There is a great variety in this book and I have yet to become bored of it, in fact when I recently moved house I was in a blind panic when I thought I'd lost it! There are a couple of recipes that will take you longer when you make them this first couple of times, but in general they live up to the promise of being easy to throw together in 30 mins. There are some great recipes in this book. I haven't had it long and have tried only a handful but I can't wait to try out the rest at any given opportunity.
Some of the recipes are a bit involved, you can tell they are restaurant recipes - they're a bit special for when you're cooking after a day at work. The recipes in this book are amazing - I am not a vegetarian, but find myself doing more and more from this book and preferring this style of cooking to eating meat because the dishes are so much tastier. I look at the list of ingredients and wonder how on earth they can make such great dishes, but they do. And they're simple to make. If you're into healthy food (and everyone should be at least a little) then this should definately be top of your list.

I totally concur with Mr Reynolds. I adore this book for its simple, but imaginative and beautifully realised recipes, using the freshest ingredients. I have loved Nadine's work since the Crank days - the Cranks Bible is an inspiring cookbook too. She totally rewrites the rules on veggie cooking, in part I think because of the many influences - Middle-Eastern and Asian among them - but also because of her effortless style. I'm waiting on a new offering from Nadine: come on, Nadine, where's the lovely new book?!
