Both me and my wife consider this the best of about 20 cookbooks we have. This is not your usual uncritical collection of recipes (like 99% of the other cookbooks), the author really teaches you new ways of thinking about vegetarian food, that go beyond italian, or asian, or midwestern style. Certainly a step forward in vegetarian cuisine innovation. Very handy, also, for those holidays when you still don't want animal foods, but don't quite know what to cook. Our two last Thanksgiving banquets have been vegetarian, and great successes too.

This year, I resolved to prepare at least three vegetarian dinners each week. I bought this cookbook, Moosewood, Laurel's Kitchen, and the Vegetarian Times Beginner's Guide. Both this one and the Vegetarian Times cookbook suggest complete menus, a boon to the beginner. Both are good, but this is the one to use when you're in a hurry.

This cookbook is unique in that the recipes are organized by season, so you can easily find soups that are appropriate for the types of fresh produce you can find in the stores, and that fit how you feel in each season. Each soup I have made from this cookbook has been delicious. Some combine ingredients that I would not have thought to put together, but they work wonderfully. I highly recommend this book to anyone interested in delicious soups!
