Like it says in the title, this is absolutely a 'must have' book - and yet I never really knew how much I needed it until it arrived.
I've been happily cooking away for the past ten years or so with nary a sauce book in sight. But I was surprised to find my culinary life was much enriched by the arrival of this book - a book that's pitched high enough to appeal to really very good cooks, yet is also accessible enough for the novice (me!).
I know I won't make every sauce in this beautiful book. I will probably dabble among the easier options and enjoy them, without really bothering about the sauces that require more exotic ingredients or kitchen skills I just don't have. And the beauty of this book is that it's fine! ... Read More:

I love Paul Gayler - as another reviewer says, he produces beautiful 'cheffy' recipes that are perfectly possible to make at home. I've used his books for years (and believe me I'm no chef) and friends are always impressed when I make one of his dishes. He's full of brilliant ideas, too - I don't like tomatoes, so his beetroot gazpacho will become a regular feature next summer.
Not for complete beginners, perhaps, but certainly nothing to daunt anyone with a few years of cooking under their belt.

For everyone who thought that burgers were strictly in the realm of fast food and junk food think again! There are some many wonderful burger recipes in here from the traditional beef to other meats and fish. Showing you how you can use real quality ingredients and turn the ordinary burger into a gastronomic feast that even a fussy child would eat (and any diet conscious parent would be happy to feed them). Far removed from the high street fast food chains, the burgers in here are more akin to the quality (if overpriced) gastro-burger joints you find in trendy areas of London.

If you like potatoes but are bored with boil, mash or fry, then you simply have to buy this book. It is packed full of fabulous photos that make your mouth water and recipes that are blissfully un-atkins friendly!!! This book started me off on a love affair with Paul Guyler's recipe books and he has yet to fail me with any of his titles - if you love this one - try the others too.

Several people in my family suffer from high blood pressure and other heart complaints so I am quite aware of the need to follow a healthy low-fat diet - and the younger you get into good eating habits, the better. I found the introductory text very useful as it sets out in simple terms the risks of heart disease, and is full of advice on how to eat well, and exactly what you should be aiming for. I am trying to follow a low-fat diet myself and I found these recipes to be really delicious, with different and exciting flavours used instead of fats and salt. This is a really well designed book and is a joy to use.

No longer boring boiled veg for me! This cookbook dedicated entirely to the lovely vegetable opens up whole new avenues for cooking. In short - you will never find yourself sitting down to a boring meat-and-two-veg meal again - and perhaps even the kids might be persuaded to eat their greens!
