Like Sophie Grigson's book "Eat Your Greens" you can look up individual vegetables and find salads based on it. Recipes come from all over the world and include simple salads like Greek Salad and more complex salads from China and Armenia. There are dips, dressings, classic salads as well as more exotic ones. Living partly in France, I also enjoy seeing the different names for salads i.e. Cos in England is Romaine in France. A great book. If you can get hold of it, I thoroughly recommend it.
