I'm a pretty good cook but I had never dared to tackle making chocolates until recently.
It was one of two books I bought to help me into the world of the amateur chocolatier and thank goodness it was. With detailed information on not only the 'how' but also the 'why' of every step of making chocolates this book has given me the insight, inspiration and courage to produce my own handmade chocolates, including how to make the various centres I'd only ever tasted in shop bought sweets before.
This book includes easily followed recipes and sumptuous photography that you'd want your own confections to match. The science in making confectionery is also explained and this information is what has helped me, so far, avoid ... Read More:

I was a little disappointed with this book to be honest.
The recipes are ok and the cupcakes turn out ok, but they're nothing special, at least I don't think so.
Despite that, the book is user friendly, as in, it contains plenty of info about frostings, ingredients and loads of decorating techniques (however I would REALLY only recommend that if you're catering for 5 yr olds).
I was after something a little more sophisticated i think and I just couldn't get round the fact that most of the cupcakes looked like a child had made them!
Sorry!

I have made a range of cakes, bakes and puddings from this book, and all but one have been fantastic. There are a number of cakes in this book that include yoghurt which makes them really moist (my favourite ones), and also the various citrus cakes are lovely: the lemon and poppy slices were delicious, while the syrup on the citrus cake adds another dimension to the cake! I also liked some unusual cake combinations such as the pistachio and cardamom one, which was fantastic. The cake that went wrong was an almond and butter cake but I think (and hope) the failure was due to an oven which was slightly too hot, or perhaps opening the oven door before the cake was ready to be taken out. I will be trying to make the cake again as the photo looks brilliant. ... Read More:

I bought this book so I could bake for my 5 year old daughter who is allergic to eggs, nuts, strawberries to name a few! Thank you so much Rosemarie for taking the time to write this book - the look of joy on her face that she can eat a cake for a change (even if she doesn't like the taste of it) is priceless. One comment I would like to make is that there are a few "americanisms" I don't understand. Luckily I have an American friend who can translate ingredients such as Club Soda which is Sparkling Water and not White lemonade as I was about to add in the recipe. A few other recipes suggest adding instant chocolate pudding mix or similar things which we don't have this side of the pond and we don't know what they are so we can't substitute them. It may ... I love this book! I actually bought it because I lost my other cupcake book for a week or two (and I use it more now!) - it's the fix of having a new book to read, dream and bake with. The vanilla lemon cheesecake recipe in this is brilliant. It's the only cake that my whole family look forward to (and we do make lots of weird and wonderful cakes!). The crumb cupcake, sounds strange, but tastes nice, and there is a recipe for hi-hats, which if you remember the days when ice cream was coated in that chocolate crispy stuff is very cool. The base cupcake recipe is probable a little flatter than most recipes which bodes well for icing, however it does use sour cream which means it doesn't taste TOO sweet which I've found others do. Highly, highly recommended.

This little book is full of great tasting flavours from the "chocolate" to "Rum and Rasin" there is definetly something for everyone in this great book!
There are some major flaws most of the ice creams take a few hours to make plus freezing time. It is also very recomended that you own an ice cream maker as it is very difficult without one.

If you like mouth-watering pictures along with your recipes, Candymaking by Ruth A. Kendrick and Pauline H. Atkinson is the book you've been looking for. I have used this book a number of times for excellent recipies for caramels, truffels, hard candy etc. Not only does this book have delicious ideas for tastey treats, but also a wonderful explaination about the supplies needed to make your sugary sensations.Candymaking really will you feel like the owner of your own candy store!!

This is an excellent introduction to the making of hand-made chocolates, covering the making of truffles, hand-dipped and moulded chocolates. But be aware - it is the same book as the 2006 "Making Fine Chocolates" by the same author. If you own one book, you own them both.
