I was looking for a cake recipe that might turn out a bit like the gf muffins sold at costa coffee - I stumbled across this book in my local bookshop, bought it at full price, came home and started to cook with it.
I have bought a copy for a friend who is dairy intolerant, and recommended it to my son who is a coeliac.
Every recipe that I have tried has worked and been delicious!
"Cooking without made easy" arrived just in time for me to hand it to our daughter for her to cook our Ruby Wedding anniversary cake for the small family celebration we were having. She baked the rhubarb and vanilla cake, and instead of icing it she covered it with pink rose-petals. It looked good, and tasted delicious! In fact all the family enjoyed it, and now our granddaughter age 9 is looking forward to trying other recipes for me.
Until I bought this book, our family and friends would ask me to bring food for myself to any celebrations, as I am allergic to wheat and sugar (painful blisters on my lips)while milk products only set off an upset tummy and mild eczema. I bought this book a few years ago when my son had milk and egg allergies (now luckily outgrown). At the time, there were very few allergy cookbooks around and I was (and still am) very impressed with this one. Unlike some other allergy cookbooks that are full of sugar-laden and other unhealthy recipes, this book has got the balance right: the recipes are tasty and healthy, real food for real children (and adults) that you will still want to make when your battle with allergies ends. The authors give great suggestions for adding extra calcium, iron, essential fatty acids - all so important for any child, but especially one on a restricted diet or battling with eczema. I am a GP and also a Member of the Royal College of Physicians. I have an interest in Allergy and Immunology and was most impressed with this book. It is well written and easy to understand regardless of what background knowledge you may have. For Medical Practitioners this is a 'must have!' so that you can advice your patients not just what treatment works well but also how to live with allergies and associated problems. For allergy sufferers and parents of children with allergies I can highly recommend the contents of this book: it will give you a lot of understanding and also practical help how to combat allergies and relieve symptoms. I bought this book so I could bake for my 5 year old daughter who is allergic to eggs, nuts, strawberries to name a few! Thank you so much Rosemarie for taking the time to write this book - the look of joy on her face that she can eat a cake for a change (even if she doesn't like the taste of it) is priceless. One comment I would like to make is that there are a few "americanisms" I don't understand. Luckily I have an American friend who can translate ingredients such as Club Soda which is Sparkling Water and not White lemonade as I was about to add in the recipe. A few other recipes suggest adding instant chocolate pudding mix or similar things which we don't have this side of the pond and we don't know what they are so we can't substitute them.
