Stacked Enchiladas Verde - Delectable! For a guy like me, it's great to have a book I can keep on the back seat of my car. A quick glance in the grocery store parking lot on the way home from work and the dinner is planned.
All my favorites are marked. They're easy to make, healthy and critter friendly.
I have owned this cookbook for over a decade now. It's amazing it's still in one piece, I use it so much! I made these recipes all the time prior to having a family to feed and use it even more so now. I really appreciate the small(er) ingredient lists, the use of canned/frozen foods (so I can actually find the ingredients in this little town!), and the way each meal is complete with side dishes and directions about what to do in what order to turn out the dish in under 30 minutes. Even my VERY non-vegetarian husband has liked many of the dishes I've made for him from this cookbook. I wish these two authors would publish a new Vegetarian Express with some new dishes in it!

...especially young ones. I have now been a vegetarian for five years and rarely use this book any more but it was GREAT when I was first starting out. Lauren Butts was sixteen when she published this book and the recipes are all geared towards kids in that age group - both in simplicity and taste.
When I bought this book it was getting a lot of buzz because it had just been published by such a young author. Judging by the date of the last review, I'm guessing it has fallen off the radar. I, however, would still recommend this book to any teenage vegetarian.

I've failed to cook from this cookbook. There are two recipes in this book for stir-frys that appear to differ only in the number of green peppers and amount of oil you use. The range between recipes in this cookbook is smaller than the range of accidental alterations I make to any recipe the first time I cook it. A recipe for bibimbap from another cookbook has me quick pickle the cucumbers and diakon, boil the carrots and the spinach, and fry the zucchini, which results in a large range of tastes mixing in the bibimbap. In this cookbook, you're told to simply fry everything. There is a fair amount of attention to presentation, and no attention to possible substitutions (although that is often covered by a set of recipes). I felt that I got all the advice available ... This is a truly outstanding cookbook, the one that I have relied on the most for a decade. I feel lucky to have bought it. The recipes for the most part, don't call for a lot of exotic expensive ingredients. The recipes are doable for everyday meals but very well crafted, having just enough of a gourmet touch that the food tastes superb, you feel like a great cook and you won't feel embarrassed to serve them to guests.
It's the kind of book that has lots of recipes that you'll make more than once because they're tasty, not too difficult and when you eat the results, you feel really nourished and cared for. Martha Rose Shulman's presentation style and storytelling is masterful as well, making the cookbook interesting and pleasurable to read.

I bought this cookbook about 10 years ago from a Hare Krshna (I technically made a "donation" to receive it) and I have to say it's one of the most used and enjoyed cookbooks in my extensive collection.
You don't have to be a vegetarian or into any kind of Eastern religion to enjoy this cookbook. This book was my introduction to Indian food in general, and after trying a few recipes, I realized, "you know, I really could be a vegetarian if I ate food like this all the time."

Finally, I found what I was looking, a vegetarian cookbook full of flavor. Bland food is my nemesis, so I was very delighted when I saw his very creative style of cooking and flavorings. and so many things to choose from!!!. from reading the book my brain started briming with ideas of my own. seitan tamales, and empanadas yippy!!!. I can now return to my native hispanic flavors without having to use meat yeah!!!! Im in love with this book. Most vegetarian books out there--which are not vegan--use fat and dairy to make food tasty which to me gets boring rather fast. as one who does not want to eat meat and is also trying to loose weight the fact that he relies on herbs and spices for flavor instead of fat is very useful.

Wow! I LOVE this cookbook! You know how it is when you come in from work and you're dead tired and ravenous and you just don't have the energy to cook anything? Well, if you can face boiling water, you can make almost any of these dishes in the time it takes the pasta to cook. Everything is super easy, fast, and delicious, and good for you to boot. My only wish is that some of the recipes were "saucier" -- since they are all low fat, they (the ones I have made, at least) tend to be more of the "pasta salad" or "pasta toss" variety than good, hearty sauces. But, much better for you in the long run, and unarguably delicious, every recipe I've tried.
